Truffles are the ultimate bite-sized balls of chocolate. They’re made with ganache, or a mixture of melted chocolate and cream, and they’re often rolled in toppings or coated in more chocolate.   • Heat Cream & Add to Chocolate Mixture: Heat the cream in the microwave at 50% power for 60-90 seconds until hot, but not boiling. Pour over the chocolate and allow to sit for at least 5 minutes, untouched.

Ingredients

  • 12 ounces (339g) milk or dark chocolate, finely chopped
  • 2/3 cup (157ml) heavy whipping cream
  • ½ teaspoon instant espresso powder or ground coffee (optional)
  • 1/8 teaspoon sea salt
  • ½ teaspoon pure vanilla extract
  • Toppings (sprinkles, cocoa powder, chopped nuts, etc.)

For Chocolate Covered Truffles

  • 10 ounces chocolate wafers (such as Ghirardelli)

Instructions

  1. Place the chocolate, salt and espresso powder in a heat-proof bowl. Set aside.
