Another favorite comfort food of mine is Chinese food.

When I was a child I wasn’t impressed by Chinese food.

That is, until my dad introduced me to sweet and sour chicken.

I’m not surprised that I loved the sweet and sour chicken when he introduced it to me.

What kid doesn’t like deep fried chicken?

I think chicken nuggets are probably the most loved food of children.

Now, as an adult, I love Chinese food.

However, I almost never order sweet and sour chicken because it’s probably one of the most unhealthy meals on the Chinese menu.

Even though this Skinny Slow Cooker Sweet and Sour Chicken is not deep fried, it is still delicious.

There is a sweet taste to it and a sour element to it as well.

It definitely reminds me of Chinese take out.

With it being a slow cooker recipe, it’s very easy to make.

You basically set it and forget it!

This recipe goes great over the classic rice, or we have eaten it alone, as a main dish.

Chicken is zero points, and like I’ve said before, I am getting sick of plain chicken breast.

This recipe really jazzes up the chicken and is very versatile.

When we had it last, I served it as a main dish without rice and I paired it with a salad.

As you know, carbs equal more points, so I often try to have very little carbs at night and this recipe filled me up just fine with a salad.

The pineapple in the recipe is also zero points because fruit is zero points as well.

This makes for a great, fiber filled meal that will keep you full.

I love the peppers in this recipe.

The red adds to the sweetness and the green adds to the sour.

It’s really a perfect combination.

If you’re like me, you’re not a pro when it comes to ginger.

The first time I bought ginger I really didn’t know what to do with it.

Treat it like you would a carrot. I wash it and peel it with a peeler and it works great.

I run it over a grater like this one and it’s quick and easy.

Here’s a tip when working with chicken.

I like to cut it up into chunks when it’s still a little frozen.

Cutting raw chicken thawed is one of the things I hate the most.

There’s just something about raw chicken that grosses me out.

It’s so much easier to cut when it’s partially frozen.

I also like to garnish this recipe with a sprinkle of chopped scallions or green onions.

Totally optional, but I think it adds some extra flavor.

Ingredients:

1 cup chopped carrot
1/4 cup white sugar
1/3 cup chopped onion
1/8 cup orange juice
3 tablespoons of this ingredient
3 tablespoons apple cider vinegar
2 tablespoons low sodium soy sauce (my favorite is here)
1 tablespoon freshly grated ginger (my favorite grater is here)
1 pound boneless skinless chicken breast, chopped into 1 inch pieces
2 cans of 8 oz pineapple chunks in juice, drained (make sure to drain them – the juice adds points)
1 large green bell pepper, chopped
1 large red bell pepper, chopped
Cooked white rice, each serving is 1/2 cup rice

Directions:

Combine all ingredients into slow cooker. Stir to mix well.

Cook on high for 4 hours or low for 6 hours.

Serve as you wish, over rice or alone.

This recipe makes 6 servings.
