These skinny pancakes are perfectly fluffy and delicious and you would never know that they are just one Weight Watcher Smart Point each! These pancakes have no added sugar or fat andare made with greek yogurt so they have 3 grams of proteinin each pancake. I haven’t had a chance to officially share on the blog, but I’ve been usingthe Weight Watchers Smart Point program for a little over a year and have lost 60 pounds so far. I think a big part of my success with the program is that I make the same recipes for our whole family. I’m always trying to create point-friendly options that my kids love too. These pancakes are kid and parent approved!

Skinny One Point Weight Watcher Pancakes (2)

Start by mashing two very ripe bananas. These give the pancakes a touch of sweetness without the added sugar. Then stir in fat-free plain greek yogurt, egg whites, skim milk and pure vanilla extract.

In a separate bowl, whisk together dry ingredients then add wet ingredients to dry and stir just until combined. Measure pancakes by the level 1/4 cup full onto non stick griddle.

You can also add fresh blueberries! Just drop them onto the pancake batter once the batter is on the griddle.

Perfectly golden brown and delicious!

Ingredients

  • 2over-ripe bananasmashed
  • 2egg whites
  • 1cupof fat-free plain greek yogurt
  • 1/2cupof fat-free milk
  • 1teaspoonof pure vanilla extract
  • 1cupof all-purpose flour
  • 2teaspoonsof baking powder
  • 1/2teaspoonof cinnamon

Instructions

  1. Preheat a nonstick electric skillet to 325 degrees.

  2. In a medium sized bowl, combine mashed bananas, egg whites, greek yogurt, milk and vanilla extract. Whisk until well combines.

  3. In a larger bowl, combine flour, baking powder and cinnamon and whisk.

  4. Stir wet ingredient into dry ingredients.

  5. Pour 1/4 cup of batter onto hot skillet and cook until golden brown.

Recipe Notes

To make blueberry pancakes, drop fresh blueberries into pancake batter once they are on the griddle.

Nutrition Information is from the Weight Watcher Recipe Builder and My Fitness Pal Nutrition Calculator. I made the serving size one pancake so it’s easier to track points. 3 pancakes are 3 Weight Watcher Smart Points, 4 pancakes are 4 Weight Watcher Smart Points, etc.

For me, the perfect serving size is three pancakes. Then I can add fresh fruit, a sprinkle of chopped pecans and a drizzle of pure maple syrup. I really love this pancake recipe because Ican add my favorite toppings and keep it point friendly. I usually serve them witha sunny-side up egg or a serving of turkey sausage on the side.

I adapted this recipe from aGreek Yogurt Pancake recipe I shared back when I first started blogging. The post is old and the pictures need to be updated, but it’s a great recipe too! I replaced the sugar and butter in the recipe with bananasto make it more Weight Watcher Smart Point friendly and I don’t think you will miss it at all!

    really great pancake recipe. I like that you add the flour as it makes it feel more like a pancake than other recipes. I usually add chopped apples sprinkled with cinnamon for the top of pancake. This morning I pureed strawberries and put that on top of pancakes. really yummy! One WW question I would like to add less flour – because that is the only ingredient that is hiking up the WW points for me. Can you tell me how to tweak the recipe so that I can add less than 1 cup flour. e.g., do I have to add 1/2 C milk?

    I am new to WW and am confused. According to the WW app on my phone, 1/4 cup of flour is 3 points. Your one-point pancakes takes 1 cup of flour. If I make 4 pancakes, wouldn’t the points be 3 points per pancake?

    These are delicious. I used one banana (instead of two) and added 1/8 tsp nutmeg. I left the mashed banana a little chunky and added an extra 2 Tbs of the nonfat milk. Ate 3 served up with ripe strawberries. I am full, my brain and my mouth are more than happy, and its 3 points. So far I am not experiencing the “pancake lag and sleepiness” I usually get after 3 pancakes. I love that the point count is so low because it does leave room for syrup when I want it. Winner!! Thank you.

    Melissa, I never left a comment before, but wanted to thank you for this recipe. My husband and I LOVE pancakes but I dread to make them because they normally are so fattening. Also I only have 20 points a day and try to use as little as possible early I in the day. My pancakes were just a bit gooey so I may add just a bit more flour or a little bit less banana next time. Just to clarify why people were confused about points was you mentioned making each pancake 1/4 of batter in your recipe, but I am pretty sure you meant 1/4 CUP of the batter. Will definitely be making these again. My fussy husband thought they were good also. Thanks again!

    I’m not sure if my bananas were not big enough (because I think they were small) but the sing 1/4 cup of batter mine only made 10 pancakes so my calories were 93 account riding to myfitnesspal. Would the size of the banana make the difference? They are absolutely delicious! IThank you

      Hi Molly! You could, but the egg whites also serve to help lift and lighten the pancakes. I think a whole egg would work, but would make them denser. Let me know if you try it!

      Maybe if you strain the yogurt? I think the thin texture of regular yogurt would cause the pancakes to be too thin.

    These were delicious. Mine came out very wet though. I had to use unsweetened almond milk because that’s all I had. I also used one whole egg and had to use 1/3 cup because I couldn’t find the 1/4 cup. They were light and fluffy on the outside, but wet in the middle. They still tasted good, but wondering if the milk changed the consistency?
