Q has become full on obsessed with these and so have I. I think this has moved into my top 3 most loved recipe creations of all time. I’d say my apple fritters is like the doughnut’s rustic, fruity cousin. Nuggets of sweet, spiced apple enveloped in soft dough with a crispy shell, and dipped in a sweet cinnamon glaze. Honestly this is next level delicious. Sound good? Let’s go.

Apple Fritters

  • 3 apples, peeled and diced into half-inch chunks
  • 1 tbsp butter
  • 2 tsp cinnamon (1 for your apples, 1 for the glaze)
  • 1 tsp ground ginger
  • 1 tsp ground nutmeg
  • Zest and juice of 1 orange
  • 1 egg
  • 50g caster sugar
  • 1.5 tsp baking powder
  • 100g plain flour
  • 1 small jar of coconut oil, for frying
  • 3 heaped table spoons icing sugar

I’m back into coconut oil in a big way. It’s ideal for this recipe; not only does the flavour lend itself perfectly to desserts, but it also has a high smoke point meaning it can handle the high heats of deep frying.

Making Your Apple Fritters

Heat up the butter in a large pan on medium heat and once melted, add the diced apples. Stir for a minute then add the cinnamon (1 tsp), ginger and nutmeg. Continue to stir for 3-5 minutes until the apples have softened. Your aim is to warm through the apples and take the raw edge off them, but not to cook them into a soft mush. They must remain as apple pieces!

Once suitably soft remove your apples from the heat and grate in your orange zest. Set aside to cool a little whilst you make your batter.

In a large bowl whisk together your egg and sugar. Next add the baking powder and squeeze in your fresh orange juice and stir again. Now pour in your apples and stir until they are coated in the wet mixture. Finally, sift in the flour and stir until you have a smooth mixture.

The consistency of your batter should be quite thick; if you take a heaped spoonful of it, the mixture should hold together the apple pieces. It should still look wet and shiny rather than like a dough. You can adjust either way with a little more flour or a little water.

Frying Your Apple Fritters

In a deep pot add your coconut oil and heat on medium. The temperature should reach 190c; so if you have a thermometer then great stuff. But if you don’t, it should reach this in about 4-5 minutes depending on your pot. You can take a small piece of the batter and drop it in to test, and if it bubbles around the edges then you’re good to go. (If it doesn’t bubble much please wait another couple of minutes for the oil to get up to temperature; if you put the batter in when the oil is too cool, it will just make for soggy fritters. Sad face.)

Take heaped tablespoons of your mix and carefully place into the oil. Flatten out the top with the back of your spoon to create rough oval shapes. This mix really expands so I recommend only frying two at a time. The batter needs to reach a rich golden brown each side for that delicious crispiness. 1-1.5 minutes should do the trick.

I recommend using a spatula plus another utensil (spoon, another spatula, whatever you fancy) to carefully flip your apple fritters over and minimise risk of splashing. Once they reach that lovely rich brown on each side you can remove them from the oil and set onto some kitchen towel to dry and cool.

Glazing Your Apple Fritters

In a bowl add your icing sugar and 1 tsp cinnamon. Add tablespoons of cold water, 2 spoonfuls at a time until you have a consistency which is quite runny. You want a glaze rather than a thick icing. Dip one face of your fritters into the glaze and let dry on a wire rack. Finally (optional) finish them with a generous dusting of icing sugar to make them pretty.

Genuinely one of my favourite recipes to date. They are eye-rollingly good. The kind of food that makes me throw my head back and do a little dance! These apple fritters are best enjoyed fresh from the fryer when they’re still warm inside and gloriously crispy on the outside. They’re absolutely unreal all on their own, but you could take them to dessert level by adding a lovely scoop of vanilla ice cream on top. Imagine that served in a lovely white dish at your next dinner party!
