I decided to share Wednesday's post a day early this week with the big holiday coming up tomorrow... especiallysince I have a recipe that I know will be pretty darn fabulous in your holiday spread. The secret is it's so good and easy to make that you'll be whipping it up for all your other summer parties as well.

This recipe is so simple and delicious. You just put all the fruit in a bowl and top with a very light honey lemon dressing. Or just drizzle some plain lime on top. I included directions to do both in the recipe and either way it tastes amazing.

Ingredients
- ½ seedless watermelon, cubed (about 8-10 cups)
- 1 cup blueberries
- ¼ cup crumbled feta
- 2 tablespoons mint leaves, chopped (If you love mint, use more)
- For the dressing*****
- 2 limes, juiced
Instructions
Combine the fruit, mint, and cheese in a bowl.
Toss in the lime juice or use the dressing found in the notes.
Serve immediately.
Notes
The original recipe featured an actual dressing! I've since started just using just the limes on this salad and I think it's just as good. However, it also delicious with the dressing and you get some extra flavor from the honey.

2 teaspoons olive oil
2 teaspoons honey
¼ teaspoon sea salt

I added small pieces of cucumber (no seeds) in with watermelon, blueberries and basil, tossed in balsamic and let this sit in refrigerator for a couple of hours. Crumbled feta from a block of feta (more flavorful) just before serving. Bit was delicious and hit the spot in this heat!Reply

We had had a salad similar to this that our daughter made for our barbecue, but this one we both really loved. The mint just gave it that extra flavour boost. I just used the lime juice as dressing.Reply

It says to combine ingredients and serve immediately. Do you think this can be made and put together ahead of time, if it sits in the fridge?

Hi Chris! I'd just cut up the fruit, mix the dressing in a separate sealed container. Then you can just toss it at the last minute and top with the cheese! I'm sure you can mix it before, but I'd be afraid it would get too soggy!
