Ingredients For Easy Jam Tarts

Our jam tart recipe is super easy you’ll just need a handful of ingredients.

  • 1 pack of Jus-Roll shortcrust pastry – I used Jus-Rol but supermarket own brand work just as well. Plus it’s worth keeping a pack of this pastry in the fridge or freezer, it’s good for turning leftover into a pie.
  • Jam – we used three different flavours – strawberry, raspberry and apricot – but you feel free to just choose your favourite.
  • 1 Egg – just choose a medium egg for this recipe – beaten for brushing the edges of the tarts so they turn golden in the oven
  • Knob of butter for greasing the tart tins – you can grease the tins using a scrap of the butter packet or a piece of kitchen roll.

How To Make Jam Tarts With Shortcrust Pastry

Step One – preheat the oven

  • Preheat the oven to 180C / 160C Fan / 350F / Gas Mark 4

Step Two – grease the tart tray

  • Grease the tart tray with butter. Just butter dabbed on some kitchen roll or butter wrapper works well to grease tins with.

Step Three – cut out the jam tart pastry shapes

  • Firstly cut the pastry block into three and roll each piece out thinly enough that you can cut twelve tart bases from the pastry. You may need to roll up the scraps and roll again to get the full twelve tarts.
  • As you cut the tarts press them gently into the jam tart tray.

Step Four – add the jam

  • Once all twelve have been cut and pressed into the tart tray add a tsp of jam to each tart case. Don’t overfill the tarts or they’ll just bubble over the edges, you only need a little bit of jam in each.

Step Five – bake the jam tarts

  • Brush the edges of the pastry with beaten egg and then bake in the oven for 10-12 minutes until the pastry is turning golden and the jam bubbling deliciously.
  • Allow the tarts to cool slightly in the tin and then transfer them to a wire cooling rack to cool completely.

Remember…. jam is really hot when straight from the oven so make sure they cool properly before the kids eat them – you really don’t want them to burn their mouth.

Make The Jam Tarts Your Way

  • Choose any flavour jam you like – just pick your favourite.
  • Try lemon curd or even chocolate spread in the little tarts as a change to jam.
  • Put little pastry stars or other shapes on top of the jam tarts as a decoration, you could also sprinkle with icing sugar whilst they’re still hot from the oven.

How To Serve Jam Tarts

  • Perfect for picnics – bright, colourful, cheap and tasty!
  • Great with a mini tea-party, alongside a selection of sandwiches, scones or other cakes. And of course a pot of tea.
  • Serve with afternoon tea
