ingredients

1 pound potatoes, peeled if desired and sliced thin
1 tablespoon light soy sauce
1 teaspoon brown sugar
1 teaspoon all-purpose flour
3 tablespoons peanut oil, divided
1 cup chicken or beef stock
1 teaspoon sugar
1/4 teaspoon salt

directions

Combine the potatoes, soy sauce, brown sugar, flour, and 1 tablespoon of the peanut oil in a large bowl. Stir to coat the potatoes in the mixture. Cover the bowl and place in the refrigerator for 1 hour.

Heat the remaining peanut oil in a wok over high heat. Add the potato slices and cook, stirring constantly, for 3 minutes, until browned.

Add the chicken stock, sugar, and salt to the wok. Mix gently, then reduce the heat to medium low, cover the wok, and let the potatoes cook until they are tender.

Serve hot.

recipe tips

Slice the potatoes uniformly so they cook evenly.

For more flavor, add some garlic or ginger in the stir-fry.

Garnish with green onions or sesame seeds before serving.

For a spicier version, add a dash of chili flakes or sriracha.

If the sauce is too thick, thin it with a little more stock.

To prevent the potatoes from sticking, make sure the wok is very hot before adding them.

Always taste and adjust the seasoning before serving, as the flavors may change during cooking.

common recipe questions

Can I use a different type of oil?

Yes, vegetable oil or canola oil can be used as substitutes for peanut oil. The oil needs to have a high smoke point.

What can I use instead of light soy sauce?

You can use regular soy sauce, but it will make the dish saltier. You could also use liquid aminos for a healthier option.

Is there a substitute for brown sugar?

White sugar can be used, but it will change the flavor a bit. It can also be omitted. Or, use honey or molasses as a substitute.

Can I make this dish without flour?

The flour helps to thicken the sauce, but you can omit it for a thinner sauce.

What can I use instead of chicken or beef stock?

Vegetable stock can be used as a vegetarian option.

How do I store and reheat leftovers?

Store in an airtight container in the refrigerator for up to 2 days and reheat in a woke or microwave.

Can this dish be frozen?

You can freeze this dish. Cool the potatoes and store in an airtight container for up to 2 months. Thaw before reheating in a wok or microwave. The texture of the potatoes may be softer after freezing.

tools needed

Large Bowl: For combining the potatoes, brown sugar, soy sauce, flour, and peanut oil. Make sure it is large enough to toss the potatoes and coat them in the mixture.

Wok: For stir-frying the potatoes over high heat. The shape of the wok allows for even cooking and quick tossing of the ingredients.

Stove: Required for heating the wok and cooking the stir-fried potatoes. Make sure to have a reliable and safe heat source for cooking.

Cover: Needed to cover the wok when simmering the potatoes in the chicken stock. This allows the potatoes to cook thoroughly and absorb the flavors.

Stirring Utensil: Necessary for constantly stirring the potatoes while cooking in the wok to prevent burning and promote even cooking.

Measuring Spoons: To accurately measure the brown sugar, soy sauce, flour, sugar, and salt. Precision is key in achieving the perfect balance of flavors.

Cooking Oil: In addition to the peanut oil specified in the recipe, have more on hand in case additional oil is needed for cooking the potatoes.

Refrigerator: A must for chilling the potato mixture in the large bowl for 1 hour before cooking. This helps the flavors to marinate and the potatoes to absorb the seasonings.

what goes with it?

Sesame Salmon Teriyaki: these stir-fried potatoes will add a unique texture and flavor to your rich and flaky salmon dish. The savory soy sauce and brown sugar in the potatoes will complement the Asian-inspired flavors of the salmon.

Grilled Strip Steak: pair these stir-fried potatoes with a juicy grilled steak for a satisfying and hearty meal. The potatoes will add texture to the meal, contrasting with the tender steak.

Stir-Fry: add these stir-fried potatoes to your favorite stir-fry recipe for an unexpected twist. The potatoes will absorb the flavors of the vegetables and sauce, creating a new and exciting dish.

beverage pairings

Wine Pairings

Sauvignon Blanc: The bright acidity of Sauvignon Blanc cuts through the savory flavors of the soy sauce and complements the slight sweetness from the brown sugar.

Pinot Noir: The earthy notes in Pinot Noir enhance the richness of the stir-fried potatoes, while its light body won't overwhelm the dish.

Riesling: The sweetness of Riesling balances out the salty soy sauce and adds a refreshing touch to each bite.

Non-Alcoholic Pairings

Ginger Beer: The spiciness of ginger beer pairs perfectly with the savory flavors of the soy sauce and adds a zesty kick to each bite.

Green Tea: The clean, crisp taste of green tea cleanses the palate between bites of the stir-fried potatoes and can help promote digestion.

Sparkling Water with a Squeeze of Lemon: The bubbles from sparkling water refresh the palate, while the hint of lemon adds a fresh, clean flavor to the savory dish.
